Oyster Rockefeller

Ingredients:

  • 12 fresh oysters

  • 1/2 cup butter

  • 1/2 cup bread crumbs

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup chopped fresh spinach

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped green onions

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • Lemon wedges, for serving

Instructions:

  1. Preheat the oven to 450°F (230°C).

  2. In a small saucepan, melt the butter over medium heat.

  3. In a medium bowl, mix together the bread crumbs, Parmesan cheese, spinach, parsley, green onions, garlic, salt, and pepper.

  4. Arrange the oysters on a baking sheet.

  5. Spoon the spinach mixture over the oysters, then drizzle with melted butter.

  6. Bake for 10 to 12 minutes, or until the oysters are cooked through and the topping is golden brown.

  7. Serve hot with lemon wedges.
